Frittata can be made with any meat or vegetables. This one I used smoked turkey, fresh herbs fresh tomatoes from my garden. I never measure anything so just season to your taste.
- Half and Half
- Skim Milk
- Shredded Cheese
- Butter or Margarine
Preheat oven to 400 degrees. Then start preparing veggies and meat. I used smoked turkey lunch meat. Rolled it up then diced it. All the herbs and tomatoes are fresh from my garden.
In a large bowl mix eggs, half and half and milk.
Put diced meat into (oven safe) frying pan with some butter or margarine and saute for a couple of minutes then dice tomato and add to frying pan. Salt and pepper tomatoes before cooking. Let this saute for about one minute then add egg mixture on top of it.
As the egg mixture begins to form around the edges turn it into the center using a rubber spatula. Keep doing this until almost set completely. Sprinkle herbs into mixture as you are doing this and add salt/pepper to taste.
When it’s almost set sprinkle shredded cheese on top and place pan in oven. Leave it in oven for about 4-5 minutes until cheese is all melted.
Switch oven to broil for just 2 minutes or less you need to watch this so it doesn’t burn.
Remove from oven and let rest for a minute or two then serve. Remember the frying pan was in oven so don’t grab the handle without a potholder!
